  • Flädersaft (Elderflower Cordial, pronounced "flair-der-sahft" in Swedish) is one of Sweden's favourite beverages in the in keeping with my foray into foraged foods, this past week has seen me produce my first batch of Swedish homebrew liquid gold flädersaft.

    It's a simple recipe, so I thought I'd share it with you in case you have access to an Elderflower (Fläderblom) tree.



     
    Ingredients:
    30pieces of Elderflower
    3large lemons
    litres of water
    kg caster sugar
    50gcitric acid


    The method goes that you need to first ensure any bugs are removed from your elderflowers by rinsing them under water. After you've done this you can dissolve the caster sugar and citric acid into a large pot using boiling water, adding the chopped lemons at the end. Be sure to cover the lemons with the sugary water mix, otherwise they can go mouldy in the ensuing days. Same thing with the elderflowers - mix them in there and cover them with the mix if you can. You should smell a nice aroma as they mix with the water.


    Next bit is nice and easy: Cover the pot and let it sit for a few days in a cool place.

    Fläderblomssaft

    (fläderblomsaft, hyllesaft, fläderblomssaft)

    Fläderblomssaft är saft av fläderblommor från arten Sambucus nigra (läs mer > Fläder). Arten skall inte förväxlas med druvfläder (Sambucus racemosa), eller tillsammans sommarfläder (Sambucus ebulus). Den "äkta" flädern har skiva blomkronor, medan de giftiga släktingarna besitter bolliga alternativt toppiga kronor. Äkta fläder blommar vid försommaren, dem andra beneath våren. Fläderblomssaft finns även att köpa i affär, men existerar ofta blandad med annat med druvjuice eller andra fruktjuicer vilket ger enstaka annan smakupplevelse än hemlagad saft. inom Skåne kallas drycken hylle(bärs)saft.


    SÅ LAGAS HEMGJORD FLÄDERBLOMSSAFT

    Hemlagad flädersaft tillreds från blomklasar vilket blandas tillsammans med citron, sötningsmedel och varmt vatten, varefter det får stå samt dra. Proportionerna kan variera och plats och ett kan testa sig fram till riktig balans. små frukter från växter kan användas, men ger en något fadd, jolmig smak. titta film via länk nedan > således kokas flädersaft.

    Ingredienser:

    • 30 knippen blomklasar
    • 50 gram citronsyra
    •   2 citroner
    •   2 kg socker
    •   2 liter vatten

    Tillagning:

    • Skölj blommorna, placera eller sätt dem inom stor kopp. Tillsätt citronsyra. Skiva citroner med skal och tillsätt.

      Fläderblomssaft

      Saft (cordial/syrup) is a sweet concentrate, made from water, sugar, berries or flowers and citrus, which is diluted for drinking. Brits refer to it as cordial, but in America it is normally called syrup.

      Cordials/syrups are popular all over northern Europe with Swedes probably the keenest makers of all nationalities, possibly as a consequence of their long tradition of foraging. Indeed, Sweden's most popular cookery book, Vår Kokbok, includes 9 saft recipes and the ever popular Sylta & Safta has

      The most popular saft in Sweden is probably fläderblomssaft (elderflower cordial/syrup), but other popular varieties include jordgubbssaft (strawberry), svart vinbärssaft (blackcurrant), rosensaft (rose) and rabarbersaft med röd vinbär (rhubarb with red currants).

      Although elderberries are a good source of vitamin C, there is none in the flowers. However, the flowers contain antioxidants, which enhance the effects of vitamin C from other sources in your diet. In other words, elderflower cordial/syrup has some health benefits, unless you add lots of alcohol! John Duxbury
